2 cups of macaroni3 tsp salt200 grams butter200 grams flour3 cups 2% milk100 grams cheddar cheesePinch oregano, pinch garlic powder2 cups flour2 eggs2 cups breadcrumbs
- In a medium pot bring water to a boil and add 2 pinches of salt
- Put macaroni in the boiling water and cook for 10 minutes
- Strain macaroni and cool under cold water
- In a small sauce pot melt the butter and add the flour and stir, cook for 90 seconds on low heat
- Add the milk and whisk, once flour and milk are fully mixed together stir with a wooden spoon for 3 minutes until thickened
- Add the cheese and stir till melted and fully incorporated into sauce, season with salt pepper, oregano and garlic
- Mix in a bowl with the macaroni and allow to cool in the fridge for 2 hours
- Prepare 3 bowls one with 2 cups flour, the second with 2 beaten eggs and the third with 2 cups breadcrumbs
- When macaroni is cooled begin to portion scoops of macaroni into the flour bowl (an ice cream scoop works well)
- Using your hands form macaroni into little pucks and put into the bowl with the eggs
- Make sure macaroni pucks are coated with egg and place in bowl wit the bread crumbs
- Coat with bread crumbs
- In a medium frying pan add enough oil to adequately coat the bottom and turn to medium heat allow oil to get hot
- Add the macaroni cook on each side for 90 seconds until golden brown
Can be eaten right away or frozen and reheated in the microwave for 1 minute and eaten on the go, enjoy!
