South side Succotash(Serves 6-8 people)2 cans of whole kernel corn6 strips of bacon ( diced )1/2 of a red onion ( diced )2 cloves of garlic ( minced )Season with Salt and Pepper to tastePreparation:Dice six strips of bacon, and put in a medium sized pot or saucepan and cook until fat is rendered. Add 2 cans of whole kernel corn, half of a diced red onion and 2 cloves of minced garlic to the bacon. Stir continuously until all ingredients have lightly browned.By: Matthew
